Gli gnocchi ricci

E’ il piatto più tipico della tradizione amatriciana. Era il piatto tipico della domenica nelle famiglie nobili di Amatrice centro e poco conosciuto nelle frazioni. La sua ricetta si tramanda inalterata da generazioni e da qualche anno la Pro-Loco organizza, in occasione della “Primaverissima”, la Sagra degli Gnocchi Ricci.

Ingredienti (per 8 persone)

10 uova, 1 kg circa di farina, acqua, sale.

Preparazione

Rompere le uova (tutte tranne una) e preparare due fontane di farina sulla tavola. In una saranno sistemate le uova (rossi e chiare). Anche l’uovo rimasto sarà utilizzato, solo che invece di spaccarlo normalmente deve essere realizzato un piccolo foro nella parte superiore da dove fuoriuscirà il contenuto. Lo stesso uovo sarà poi utilizzato come misurino per l’acqua. Calcolare dunque 5 misurini d’acqua che sarà fatta bollire con un cucchiaino di sale fino.

Nella prima fontana, impastare la farina e le 10 uova, come se fosse pasta all’uovo. Nell’altra fontana di farina, aggiungere l’acqua (deve essere bollente) e impastare fino ad ottenere una consistenza simile a colla. Solo a questo punto si potranno unire i due impasti e dopo qualche minuto si otterrà l’impasto principale dal quale tirare fuori gli gnocchi. La pasta ottenuta deve essere morbida ed elastica.

A questo punto, dopo aver coperto con un panno l’impasto (per non farlo asciugare), tirare fuori piccoli pezzi con i quali formare strisce del diametro di circa 1 cm che saranno tagliate in pezzetti di circa un centimetro di lunghezza. Sempre operando con la farina, strisciare il pezzetto lungo la tavola con il medio, l’indice ed il pollice della mano, così da ottenere lo gnocco (da 3 a 5 cm di diametro).

Per la cottura, scolare gli gnocchi appena tornano a galla.

Il sugo ideale per gli gnocchi ricci è quello a base di spezzatino di castrato di pecora, macinato misto di maiale e vitellone, spezzatino di vitellone. Condire con parmigiano e pecorino nelle stesse quantità.

This is the most typical dish of the Amatrice tradition. It was the typical Sunday dish for noble families in central Amatrice, but little known in the hamlets. The recipe has been passed down unchanged for many generations, and for several years now the Pro-Loco has been organizing the Sagra degli Gnocchi Ricci festival, during the Primaverissima.

Ingredients (for 8 people): 10 eggs, approximately 1 kg of flour, water, salt.

Preparation: break the eggs (all except one) and prepare two wells of flour on the table. In one, place the eggs (yolks and whites). Use the remaining egg also, but instead of breaking it in the normal way, make a small hole at the top, from which to remove its contents. Then use the shell of the egg to measure the water. Calculate 5 measures of water to be boiled with a teaspoon of fine salt.

In the first well, knead the flour and the 10 eggs, as if you were making egg pasta. In the other well, add the water (it must be boiling hot) and knead until obtaining a consistency similar to glue. Only at this point can the two doughs be joined, and after a few minutes you will have the main dough from which the gnocchi can be made. The pasta must come out soft and elastic.

At this point, after having covered the dough with a cloth (so it won’t dry out), break off small pieces with which to form strips of about 1 cm in diameter and then cut into pieces about 1 cm long. Continuing to use flour, drag the piece along the table with your middle finger, index finger and thumb, in order to obtain the gnocco (between 3 and 5 cm in diameter).

When you cook the gnocchi, strain them as soon as they return to the surface.

The ideal sauce for gnocchi ricci is a sauce with spezzatino di castrato di pecora (mutton stew), macinato misto di maiale e vitellone (mixed pork and tender beef), or spezzatino di vitellone (tender beef stew). Season with equal quantities of Parmesan and pecorino cheese.
